Main Functions

  • Sweetness and Flavor Control: Its sweetness is typically only 1/4 to 1/2 that of sucrose. Improves mouthfeel and texture (acts as a bulking agent/excipient).

  • Moisture Retention: It has good water-holding capacity, preventing baked goods from drying out and extending shelf life. Helps inhibit microbial growth, improving product stability.

  • Physical Stability:

  • Encapsulation: During the powdering of flavors and oils, it often acts as a carrier, "locking" volatile components within the powder through spray drying.

  • Prevents Separation: In non-dairy creamer (coffee mate), it contributes to emulsion stability and increases bulk volume.

  • Promotes Maillard Reaction:

  • During high-temperature baking, the reducing sugars in it react with proteins, giving bread and cookies an attractive golden-brown color and characteristic toasty aroma.
