About Isomalto-oligosaccharides (IMO)
Isomaltooligosaccharide (IMO) is produced from starch through the action of specific enzymes. It refers to a class of branched oligosaccharides composed of 2 to 10 glucose molecules with at least one α-1,6 glycosidic bond, having a degree of polymerization typically ranging from 2 to 5.

Main Functions
IMO, a gut health supplement, is one of the most classic prebiotics. It cannot be digested by human saliva, gastric juice, or enzymes in the small intestine, and can directly enter the large intestine.
Proliferates Probiotics: Significantly promotes the growth of Bifidobacteria and Lactobacillus.
Improves Intestinal Environment: Fermented by bacteria to produce short-chain fatty acids, lowering intestinal pH and inhibiting putrefactive bacteria.
Moisture Retention: Its good hygroscopicity prevents baked goods from drying out.
Anti-crystallization: Prevents crystallization in high-concentration syrups.
Viscosity Control: Its viscosity is slightly higher than sucrose, giving beverages or sauces a fuller body.
Cavity Prevention: Oral cavity cariogenic bacteria like Streptococcus mutans cannot utilize IMO to produce acid, thus it does not cause tooth demineralization and has anti-cariogenic properties.
IMO can also serve as a flexible ingredient in dietary production. It provides sweetness and texture without significantly affecting blood sugar levels, which is useful for managing diabetes and weight issues.

- Functional Beverages: Low in sugar and refreshing, often used to reduce the amount of refined sugar in beverages without masking the original flavor of fruit juice or tea. Very stable in carbonated drinks or yogurt beverages.
- Dairy Products
- Prebiotic Fortification: Used in yogurt, milk drinks, and ice cream. It proliferates Bifidobacteria and also improves mouthfeel. In ice cream, it inhibits ice crystal growth and improves melt resistance.
