About Fructooligosaccharides (FOS)
Fructooligosaccharides are produced from sucrose using the catalytic action of fructosyltransferase enzymes. They are mixtures of oligosaccharides consisting of 1 to 3 fructose (F) units linked by β(2→1) glycosidic bonds to the fructose moiety of a sucrose (G-F) molecule, resulting in kestose (GF2), nystose (GF3), and fructofuranosylnystose (GF4).
